Hi, newbie here.
I'm looking at buying some land (~95 acres, 1/3 in former farmland and 2/3 wooded). It's all county with no zoning, but I've been having a hard time finding any information about permits for seasonal or hunting cabins in the county. Eventually I'd like to put in a "real" strawbale house with composting toilet, solar, well, et cetera but for now I just want a small cabin to spend time in until I find the best spot to put my permanent house. Does anyone have any experience with St Lawrence County and their building permits for seasonal cabins?

If you can't find building permit info online, then I'd think you need to start telephoning. I would start by telephoning the planning department. They should be able to direct you to whoever is in charge of that for the property you are looking at.
Where I am, (NM) building permits are handled by municipal governments, and when outside of an organized area the county itself has their own rules.

I pull a lot of of permits at my job, quickest way I find out who is in charge is bing maps, put an address in, or just pick a spot on the road that's the closest, it'll break it down from country, to state, to county, then to township, borough, city whatever 
Just a quick search of 2 random locations in that county find that both have a website with code enforcement contacts, now weather or not they handle their own enforcement?

You don't say where in the county you are looking, but be aware that the southeast portion of St. Lawrence County lies inside the Blue Line, that is, the Adirondack Park.
If you're in this area you will likely have another layer of government with which you have to deal: the Adirondack Park Agency.

Half of the property is in DeKalb, half in Gouvernour. Been trying to reach the CEO but only getting a full voicemail box *shrugs* Tried calling both the county and the cities, but both told me to call the CEO so that's a snake chasing its tail. Very pleasant folks, though.
