I'd like to replace some PT 6 x 6 posts supporting a porch roof that have warped.

Would screwing together 3 2 x 6s (4.5" x 5.5" actual) or 4 2 x 6s (6" x 5.5" actual) and using them as replacement posts be a good way to make sure they don't warp again?

Yep. Look at the end grain and put them together with opposing C3C3 shape so they fight each other as they dry. (I can't make a backwards C so I used a 3) Use construction adhesive and wood clamps, then screws. Glue screw clamp the middle first 3C. Then after curing, glue screw clamp C3C3. You may have to let the PT 2x6 dry for a few months with stickers.

How did the current 6x6 warp? I have seen alot more 2x PT warp than 6x6 warp. In fact in a family members basement remodel we ended up buying twice as many 2x4 and let them sit...then returned the ones shaped like bananas.

They bowed noticeably in one direction, probably due to roof weight, but it's just a metal porch roof with wood framing, so the load isn't much. Two posts stayed straight, two bowed quite a bit.

structurally they are probably just fine, why not just box them in with boards to make them look square.

There not going to bow from weight at least not that weight. Wait these are vertical posts correct?

Do the warped posts have a heart in them?

Vertical, yes. Don't know if they have the heart in them or not. Bowed too much to be able to box them in.
