Just redoing a small area and needed to remove the old drywall to do some new electric. When we took out the old fiberglass insulation had mice droppings in a small area. I caulked the area around the stud cavities and where the wires feed from the ceiling to the wall. Know that it's sealed correctly (we bought our cabin) would mineral wool be a better choice than fiberglass? I've read that mice will not go into/live in it? It is a 2"x4" wall and was planning on using R15 vs the R11 that was in there.

Rockwool / Mineral Wool like Roxul is less accommodating to critters, be it mice or bugs and has a few other +'s over fibreglass. Working with Roxul or similar is a little different than FG as IMO it is better behaved in general meaning it fills cavities snugly & stays put unlike FG which wants to settle, as you likely noticed when you opened your walls (aside from the mouse houses).

Having used both in various projects, if you can afford the roxul, it is a superior product in all the ways that Steve_S has mentioned. Also, you can take a blowtorch to it and it will not burn.

Some posters on the forum have said that mice will burrow into it. I don't know, never used it.

Having put Roxul into my current cottage addition, I can say that the mice will use it for building nests. Do not leave any loose pieces around and that will reduce any mouse problem though. Squirrels and chipmunks however do not seem to like it at all. It is superior to FG and will not make you itchy when you cut it. I use it for the sound proofing qualities, it's non flammable properties and of course it is great insulation .

If you know that mice are getting in from the very bottom of the walls, than a layer of few inches of gravel might fix the issue. I had good luck sealing cavities with gravel and mice never re-occurred after that. Rats are a different story though.

Gravel and stainless steel wool for smaller holes. They can't gnaw through SS wool.
