I plan on mounting my Shurflo next to a 300 gallon IBC tote. The tote will be filled by a pump powered by a generator that will pull the water from the lake when I need to refill the tote, (turned on manually).

The best spot to place the tote is roughly 40' from the kitchen. I will be running a half inch pex line under the cabin.

Anyone see any issue with that distance? Will the pump be able to maintain pressure from that far away?

Horizontal distance means very little compared to vertical. Look at the pumps flow/pressure chart to see if it's going to product the water needed. Specs may claim 3gpm and 45psi but that's with no head pressure/vertical rise.

I have found that a 2.9gpm pump is about bare minimum for a shower because of the head pressure.

40 feet shouldn't be a problem for maintaining water pressure with a properly sized pump. Just ensure the pump's specifications match your distance and desired flow rate.
