The Schluter product is fool proof. It is a bit expensive but most tile shops carry the product or you can buy it online. There are many videos on the net.

Finally got to do this! I put two coats and I'll put a third next time this weekend..
Issue... The small gaps between my pine strips, which some are 1/16 of an inch, can't get filled with the epoxy.. Basically I feel that none of the seams between those strips is really sealed against water..
I can silicon all those seams but I hate silicon as it won't last so long and re doing all these seams in the future will be a colossal pain..
Any advice?

One issue with silicone is that new silicone does not adhere to old silicone. So you are right, any redo's down the road will be a real PITA.
My best advise is the same I gave 6+ months ago; FRP panels. Those spaces between wood will haunt you for a long long time. If it was not a shower I would not worry about it. Being a shower it will get wet behind at some point.
