Looking good!!
How do you make your venison burger? I've been using pork trimmings for a while with a mix of pork meat and fat, but my wife doesn't love it, maybe because we have to fully cook the burger?

Not grilling today so far, but a bit of kitchen news. I eat eggs a lot, usually fried sandwiches. The other day a woman tells me hard boiled eggs are great. Of course I knew that, just never make em. So I did, wonderful easy snack. I got back to her, she then says they make a great potato salad. Dang, what rock have I been under? Just finished that, still cooling for lunch.

I do lots of my venison burgers straight venison. Sometimes chop some bacon into it but as long as you don’t overcook it straight venison is pretty darn good.
Meatloaf looks great darz. Makes my mouth water.

Quoting: paulz hard boiled eggs are great. Here's a couple gadgets that work great. The first one just used a little water in the bottom, then I guess it steams them. You can make eggs soft boiled, hard cooked or turn them into sulfur bombs. Lol The other you put the cracked eggs in with cheese, bacon bits or whatever, them toss them in the microwave. You can make them like scrambled eggs or just use the egg whites with whatever. IMG_20250627_1435089.jpg

A lot of people that don't like deer or wild meat, don't cook it correctly. I still love fresh back straps, cut about an inch thick, then cooked in a cast iron skillet with butter.

Quoting: darz5150 Here's a couple gadgets Might have to try that steam method but I’m off grid so power saving. I make the coffee by boiling water to pour into the coffee dripper so I figured might as well boil the eggs while it’s heating up, then pour the water in the dripper. Eggs came out great but coffee suffered. Who would think whole egg boiling would affect coffee water but I guess it did.

You might be able to try it in a regular pot/pan with a lid. The eggs are only in about 1/2 inch of water.

Quoting: FishHog Why do you have to fully cook the burgers?
Because I mix in pork trimmings with the venison, the pork trimmings are probably 50% meat and 50% fat. Its my understanding you don't want to eat undercooked pork and my wife has "food born illness" concerns...
I am wondering if I should change up my burger recipe, as for not adding any fat I've never been able to keep the burgers together without it...
And yes, backstraps are one of our favorite meals....I have to cook the crap out of my wife's or she won't eat it, but mine I like medium....

Got these at the buck 25 store yesterday. The regular one I’ve used on the pancake pan over the lp burner, works great. First time I’ve seen the grilling one, no idea what it does different. Probably both bad for you..
