Small Cabin Forum / Cabin Construction / Oak stain/sealant

I'm trying to keep the raw look (of our cabin interior) without adding color, but I want to bring out the grain and true color of the oak. I have a product that I will be putting on but it's more of a gloss sealant that says it can be put on over a stain. The guy who sandblasted our cabin logs recommended this: http://www.sashco.com/products/symphony/ Also with interior stains, I'd rather use a water based. Any pros/cons about that?

Another oil based finish that I like is General Finishes Seal a Cell https://generalfinishes.com/retail-products/oil-base-wood-stains-sealers It can be topped by their Arm r Seal for a tougher higher build; https://generalfinishes.com/retail-products/oil-base-top-coats/arm-r-seal-urethane-to pcoat
