Wondering if gravity feed of about 5-10 psi is enough to fill a toilet tank.

Something like a toilet tank will not mind a low pressure feed. It will take longer to fill, but the valve operates on a lever arm float in most caes so that part is independent of pressure. More important may be to use a dual flush design to help conserve the water so the storage tank does not need refilling as often.
