I have an A-Frame and am adding insulation to the ceiling and covering in pine board. I've read a few topics about tongue in groove pine and most recommendations suggest finishing the pine. My original thought was to leave it unfinished - what are the pros/cons to this option? Will the coloring really change that much? Will it shrink/warp/crack if unfinished?
Are there people on here who have left pine unfinished and are satisfied (or dissatisfied) with the results?

I have some in my cabin bathroom that I didnt put any finish on and it hasn’t changed much. It doesn’t see much natural light though. I also have pine doors that aren’t finished and get looks of natural light and they haven’t darkened much. You can see in the first bath pic was when it was installed and the second was last week, about three years

I never got around to finishing the pine inside my '83-'84 build, it aged/yellowed a bit but looked good to us. Imo a lot of the yellowing is the finishes used.
And I will mention that if you use a finish it could very well make removing 'whatever gets on it' easier than if it could soak into the wood.
I did finish the locally cut, aged and milled cherry I used in my small home living room, 3",4" and 5" widths full 3/4" thick t&g. I used a 50/50 mix of odorless mineral spirits and boiled linseed oil, rubbed in with a dipped cloth. It was summer and all the windows were open. We still had to be gone for a day, should have been 2. That was the late '80s and it still looks great.

The darkening is not going to happen rapidly unless the inside air is badly polluted. Or unless one has too many blowbacks from a wood stove fire.
Even walls finished in water or oil-based varnish or polyurethane will show some color difference after a few years. Look behind a framed picture that has been hanging in the same place for a few years.
However, raw wood will pick up dust and dirt from the air the same way that raw fabrics can be soiled by the environment of the room. And that is to say nothing about how raw wood may soak up and be discolored if someone has an accident with a colored beverage or a slice of pizza. Fingers leave behind enough traces that eventually the area around a light switch will be discolored.
There is little I can do to eliminate the "ghost shadow" of the picture or clock that has been mounted on the wall or the fingerprint grime left on raw wood. But I can scrub off dirt, grime, pizza sauce and finger grime from a surface that has had a sealing finish applied; poly's, shellac, lacquer, most drying/hardening natural or polymerized oils, etc.

A ceiling will be least affected by not finishing. However, I'd brush on a coat of water-based clear coat. Makes it pick up less dust and webs and easier to clean when it does. A water-based coat does not yellow anywhere near the same as an oil-based coat.

It shouldn't warp or crack if left unfinished. Mine's darkened some in a couple of years, but that's it. I like an unfinished, natural wood look, comes down to personal preference, though. Finishes offer some protection, yes, but I've never had any issues with cleaning off dirt, fingerprints, smudges, etc., with just soap and hot water.
